Mama Italiana Eggplant Lasagna

Who doesn't like a fine homemade lasagna? Today I was grocery shopping and found a good deal on eggplants and thought to myself what I could do with it. Eggplants aren't the most popular vegetable on the block and I recalled a lasagna I tried years ago at a house party. According to the Canadian Encyclopedia eggplants are comparable to tomatoes in nutrition but have better shelf life! Eggplant is a very good source of dietary fiber, vitamin B1 and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate and vitamin K. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid. Wow, now that's a healthy mouth full!

I wanted to share this recipe because it can last a few days and you can get creative with the ingredients so here is my improvised recipe below. At the bottom of this page you can click the link to direct you to the original recipe by!
