Mama Italiana Eggplant Lasagna

Who doesn't like a fine homemade lasagna? Today I was grocery shopping and found a good deal on eggplants and thought to myself what I could do with it. Eggplants aren't the most popular vegetable on the block and I recalled a lasagna I tried years ago at a house party. According to the Canadian Encyclopedia eggplants are comparable to tomatoes in nutrition but have better shelf life! Eggplant is a very good source of dietary fiber, vitamin B1 and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate and vitamin K. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid. Wow, now that's a healthy mouth full!

 

I wanted to share this recipe because it can last a few days and you can get creative with the ingredients so here is my improvised recipe below. At the bottom of this page you can click the link to direct you to the original recipe by bonappetit.com!

Mama Italiana Eggplant Lasagna

INGREDIENTS

​

Marinara

  • ¼ cup olive oil

  • 1 head of garlic, cloves crushed

  • 1 large red onion (I used a regular onion), chopped

  • 1 cup of mushrooms

  • 1 lb of ground beef (I adjusted this vegetarian meal with meat- sorry)

  • 1 cup of chopped peppers (its what I had left in the fridge)

  • ½ teaspoon crushed red pepper flakes

  • 1 28-ounce can of tomatoe sauce

  • ¼ cup dry white wine

  • 1 large tomatoe that you will squeeze into the recipe

  • 1 teaspoon of parsley

  • ½ teaspoon dried oregano

  • Kosher salt

 

Eggplant and Assembly

  • 1 Large eggplant sliced lengthwise ½–¾ inch thick

  • 1 zucchini (I used it because I had it in the fridge) 

  • Kosher salt

  • 2 cups bread crumbs 

  • 1½ teaspoon dried oregano

  • 1 teaspoon freshly ground black pepper

  • 1½ cups finely grated Parmesan, divided (I just grated mozzerella cheese that I had in the fridge) 

  • 1½ cups all-purpose flour

  • 4 large eggs, beaten to blend

  • 1â…“ cups olive oil

  • ½ cup finely chopped basil and parsley, plus basil leaves for serving
